Just gotten the Mooncake Jelly mould from my mom as she's clearing out the newly renovated kitchen. Since Mid Autumn Festival is just few days away & I have the mould, the ideas of making some Jelly Mooncake just struck my mind.
The amount of ingredients below is enough to make 4 jelly mooncake.
Ingredients
• 120g Konnyaku
• 250ml Water
• 250ml Puree Coconut Milk
• Durian Meat
• Pandan Leaves
Instructions
1. Mix 250ml Puree Coconut Milk, 60g Konnyaku & Pandan Leaves to boil. Stir well until Konnyaku is fully dissolved.
2. Discard the Pandan Leaves, cease boiling, add the Durian Meat to the mixture & stir well.
3. Pour mixture (Durian Puree) into smaller mould & allow it to set for later use.
4. Mix 60g Konnyaku with 250ml, boil & stir constantly until mixture fully dissolved
5. Fill 1/4 Mooncake mould with the mixture, place the Durian Puree made earlier into the Mooncake mould & fully fill the Mooncake mould with the mixture.
6. Allow the Durian Puree Konnyaku Mooncake to be cool in the refrigerator for at lease 30min.
