This is a light refreshing dip that adds zest to any meal. The main ingredients are crunchy cucumber slices, thinly sliced red chillis and onions in a syrup of sugar, salt and vinegar. Ajaat is eaten with some kinds of curries to cool down the pungent richness, and always accompanies Thai satay and barbecued meats.
Ingredient:
1/2 cup white vinegar
2 tsp sugar
1/4 cup sliced cucumber
1/4 cup sliced shallots
1-2 tsp chopped green chillies to your taste
Method:
Put vinegar, sugar and chiles in a pint jar, mix throughly, add sliced shallots and cucumbers. Mix ingredients and place in the refrigerator to develop flavours for a few days before using.
