Prik Kab Kleua, aka dry salt & sugar dip seasoned with crushed chilli is a common dip in Thailand roadside fruits as the local often starve off the effects of heat and thirst with fresh fruit snacks.
Ingredients:
4 tsp Phom Prik Ki Nu (Ground dried red bird's eye chilli)
5 tsp Sugar
1 tsp Salt
Method:
Mince the dried bird's eye chilli.
Mix sugar & salt in a mixing bowl until flavor of salt comes through but does not overpower sugar. (For Sweet Fruits, it taste better with more salt)
Mash in the chili & mix until it has a strong hot bite.
